I'm partecipating to boinc project since 2005 but in boinc manger -> statistics I can see the credit situation for my project only for the last month, more or less.
And if I update a project the statistics for that project are reset to the present day only.
How can I see project statistics from the beginning to today??

n't. Those points showing in the statistics tab are made by your BOINC having contact with the project server(s). Each credit change sent in such a communication is a point on the graph.
BOINC doesn't remember any of the contact points, other than the last one (in the sched_reply*.xml files).

Default statistics graph is 30 days, as far as I know.
You can increase the amount of days by making a cc_config.xml file with the following entries:

<log_flags>
</log_flags>
<options>
<save_stats_days>N</save_stats_days>
</options>
</cc_config>
[/pre]
Where N is any numerical value from 0 - 9999.

You could try an external statistics site, like BOINCstats or Free-DC. See also the "Cross-project statistics" section in any of your project accounts.
